All food and drink that we consume is either promoting longevity of our cells with health via alkalinity or deterioration via acidity. 

When cells are provided with alkaline rich food and drink it promotes the longevity of the cell while acid based food and drink promotes degredation. 

The pH (potential of hydrogen) level determines the level of alkalinity or acididty for food and drink. 

The internal environment of our bodies is maintained at a pH of just about 7.0. This means our internal environment is alkaline. 

Maintenance of this state is a dynamic, not static, process mediated moment to moment by numerous reactions that produce acid products. 

When an alkaline environment is maintained in the body, metabolic, enzymatic, immunologic, and repair mechanisms function at their best. The acid-forming metabolics of stress and inflammation and of high fat and high protein foods are adequately and effectively neutralized only when alkaline based food and drinks are available. A diet that is predominantly alkaline forming is essential to the maintenance of sustained health.

Our current diet and water sources are mostly acidic and goes against the natural state of our internal environment. Acidic stress is the result of chronic acid exposure, primarily from diets high in sugars, animal protein, emotional stress and physical stress (via lactic acid buildup). 

Acidic stress causes our bodies to use bones as a means to balance the acid. 99% of the total amount of calcium in the body is located in the bones and provides a reservoir upon which the body can draw to neutralize chronic states of acid.
